We're out of Mezza Pinot Grigio. I regret to not ask when it's expected but there is a good chance it will arrive tomorrow. But I'm also guessing.
I found two bottles of Sierra Nevada and a Stella in the reach-in. These thoughts came to mind: I didn't note them in the waste log, can we all agree that the waste log is pretty spotty (after seeing the sporadic dates for drafts) and if there are better ways to communicate items we are up but also realistically understanding that some things might not sell the rest of the night. I was thinking a running laundry list but of course it's tedious during a rush. Just things to think about.
Alright, floors. Ian pointed out tonight that we have been neglecting the area around tickets and the water station. I will admit I tend to avoid moving the beer coolers until I feel guilty about it but when it comes to these areas, they really should be included in "doing the floors". They get dirty; you'll see it when you squeegee.

I'm also sorry for kidnapping the bar recipes. I'm working on an Operations Manual for the bar. Suggestions? Comment away. Our slag of a bar book is getting a Julia Roberts. We have also been given a deadline of this Friday, for opening, mid and closing checklists, so expect these next year.
Last thoughts. Shake waste and our beverage knowledge. Random fact: Arthur Guinesss fathered 21 children. I say, damn. Expect quizzing on shake recipes and general beer knowledge in the future. They're working on a training manual and the higher-ups have been asking questions. The more we know, the more we get money + get paid. Yeah buddy. Oh yeah, shake waste. As a neurotic closer and curious problem solver, I've been thinking about how much shake mix gets thrown after a rush. We're obviously using too much. Here's my thought process: less shake mix=shakes that don't overflow and maximum usage of bessie's bags which can mean the difference when you've chosen to take the ultimate risk of closing down the shake machine early so you can make it out to Tuesgayz at a decent time because dancing with your friends feels great. Life is meant to be enjoyed. Fin.
