Dearest Friends,
So, a Mr. Nick Vega told me a couple of days ago that we are to scrub the French presses out with soap and rinse them in the dish pit and THEN dip them in quat..y'know, pesky health code and all!
What I've been doing is scrubbing them out in the dish pit with a green scrubbie and then transferring them all to a clean bus tub. Then I get a 6-quart container and fill it up 2/3 with quat and take it all back to the bar. There I will submerge the carafe and plunger, separately mind you, and then set them aside to dry/sterilize. Then, that sani is still good to use so I will freshen up the sani-buckets with that..MULTI-TASKING!!
